Kojima specializes in traditional sushi and americanized sushi rolls. From the recipes of his father in Tokyo he includes authentic Japanese appetizers and entrees as well. Established in 2011. In 1976 Kojima traveled to Chicago via Tokyo and NYC to follow his culinary dreams to be a French Chef. After working in 5 star hotels he traded his French culinary expertise and returned to his roots. Flying his father in from Tokyo, they worked side-by-side until he mastered the art of Japanese cuisine. In 1979 he opened his first restaurant in the suburbs of Chicago. Today he has continued that same tradition with his daughter. Open in 2011, Kojima and daughter Amy have worked side-by-side creating another successful restaurant, Kojima’s Sushi & Japanese Cuisine. They maintain tradition, added local ingredients and lots of Aloha!
