Baby Back Blues BBQ specialize in Texas BBQ, Smoked on a 2 ton BBQ Pit, including Beef Brisket, Pulled Pork, Pulled Chicken, St. Louis Ribs, Tips, Smoked hot link’s, and Sausage. Our “crazy good” side orders such as fresh cut fry’s, creamy cole slaw, hearty pinto beans, tasty mac and cheese, flavorful green beans, amazing mash potatoes, cool cucumber salad, sweet corn on the cob, are all prepared from scratch. Established in 1998. Baby Back Blues Started with the idea that good southern BBQ was needed in the north. There were plenty of Chicago aquarium style BBQ, famous for it’s Rib’s, Tip’s and Hot Link’s around, but lacked the southern pit style BBQ, famous for meats such as Beef Brisket, Pulled Pork, Texas pit style Rib’s and tips. Ken Faught and Jim Holway took a year out and visited Great Barbecue joints in the Dallas Fortworth area, BBQ joints such as Bodacious, Angelos, Odems, Sonny Bryans, and even Jack Cawthon’s In Nashville Tennessee. The proprietor of these establishments were gracious and willing to help two young fella’s do BBQ, “Texas style” up in Chicago. That’s how Baby Back Blues BBQ got it’s start..
