Established in September 2015, Down the Hatch was started by three childhood friends from Georgia. Javier Barberi, Dave Fincher and Julian Bonfardin studied hospitality management in college and moved to Maui after graduation. They worked in different areas of the service industry for several years before launching out on their own. They wanted a restaurant/bar catering to the community and guests of the beautiful island of Maui – and Down The Hatch was born.
